The lecture will take place on Friday October 6th at 12:10-13:00 in Icelandic. Bryndís will focus on different aspects of diet and health. She will also look specifically at how sustainability has been integrated into new dietary recommendations. This applies, for example, to the new Nordic Nutrition Recommendations (https://pub.norden.org/nord2023-003/) that were introduced in Iceland this summer following many years of scientific work of Nordic experts. How does such advice look to the audience? Which factors can possibly hinder, and which factors can possibly support dietary changes in this direction?
Towards the end of the talk, a small interactive workshop will be held around the topic, but the speaker will stay in place after the meeting and will happily discuss these issues further.
Bryndís Eva Birgisdóttir is a professor of nutrition at the University of Iceland. After her master's degree in clinical nutrition from the University of Gothenburg in Sweden, Bryndís Eva completed her doctoral studies at the Faculty of Science at the University of Iceland. Her research focus on the association of nutrition with both physical mental health, for example through the intestinal microbiota, with both Icelandic scientists and strong international collaborations. Bryndís is also very interested in the many factors that influence what we eat, but to uncover those mysteries, it is important to look at the whole food system.
